Pilau Masala

Pilau masala, also known as pulao masala, is a spice mix used to flavor pilau or pulao, a rice dish that is popular in Kenyan, South Asian and Middle Eastern cuisine. The blend typically includes a combination of whole and ground spices such as cumin, coriander, cardamom, cloves, cinnamon, bay leaves, and black pepper, among others.


The spice mix is generally designed to add a warm, aromatic flavor to the dish and to complement the other ingredients used in the pilau, such as meat, vegetables, and nuts. It can also be used to flavor other rice dishes, stews, or curries.

PILAU - RECIPE

Ingredients:

2 cups of basmati rice

1 large onion, sliced

2-3 medium potatoes, peeled and cubed

2 tablespoons of TOP FOOD Pilau Masala

2-3 tablespoons of vegetable oil or ghee

3-4 cups of water or chicken broth

Salt to taste

Directions:

1. Rinse the rice in cold water until the water runs clear. Soak the rice in water for 30 minutes.

2. In a large pot, heat the oil over medium-high heat. Add the sliced onion and cook until golden brown.

3. Add the cubed potatoes to the pot and cook for 2-3 minutes until they start to soften.

4. Add the TOP FOOD Pilau Masala to the pot and stir well. Cook for 1-2 minutes.

5. Add the drained rice to the pot and stir well until the rice is coated with the spice mixture.

6. Add enough water or chicken broth to the pot to cover the rice by about an inch. Add salt to taste.

7. Bring the mixture to a boil, then reduce the heat to low and cover the pot. Cook for about 20-25 minutes, or until the rice is fully cooked and the liquid has been absorbed.

8. Once done, fluff the rice with a fork and serve hot.
