Quinoa Salad Recipe with Feta and Olives - Recipe

Ingredients:

1 cup uncooked quinoa

2 cups water

1/2 red onion, diced

1/2 red bell pepper, diced

1/2 yellow bell pepper, diced

1/2 English cucumber, diced

1/2 cup pitted kalamata olives, halved

1/2 cup crumbled feta cheese

2 tbsp extra-virgin olive oil

2 tbsp red wine vinegar

1 tbsp TOP FOOD Greek Spice Blend

Salt and black pepper, to taste

Fresh parsley, chopped, for garnish

Instructions:

1. Rinse the quinoa in a fine-mesh strainer under cold running water. In a medium saucepan, bring the quinoa and water to a boil. Reduce the heat to low, cover, and simmer for 15-20 minutes until the quinoa is tender and the water is absorbed. Remove from heat and let cool.

2. In a large bowl, combine the cooled quinoa, red onion, red and yellow bell peppers, cucumber, and kalamata olives.

4. Pour the dressing over the quinoa salad and toss to combine.
