Beef Curry Recipe
Ingredients:
1 lb beef stew meat, cut into 1-inch cubes
2 tablespoons vegetable oil
1 large onion, chopped
2 garlic cloves, minced
1 tablespoon ginger, grated
2 teaspoons beef masala
1 teaspoon ground turmeric
1 teaspoon ground cumin
1 teaspoon paprika
1/2 teaspoon ground coriander
1/4 teaspoon cayenne pepper
1 (14.5 oz) can diced tomatoes
1 cup beef broth
Salt, to taste
Fresh cilantro, chopped (optional)
Instructions:
Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Add the beef and cook until browned on all sides, about 5-7 minutes. Remove the beef from the pot and set aside.
Add the chopped onion to the pot and sauté until softened, about 5 minutes. Add the garlic and ginger and sauté for another minute.
Add the beef masala, turmeric, cumin, paprika, coriander, and cayenne pepper to the pot and stir to combine.
Add the diced tomatoes (with their juice) and beef broth to the pot and stir to combine. Bring the mixture to a boil.
Return the beef to the pot and stir to combine. Reduce the heat to low, cover the pot, and simmer for 1-2 hours, or until the beef is tender.
Season with salt to taste. Garnish with chopped cilantro, if desired.
